Honey Spiced Pumpkin Cookies
If you’ve been waiting for this recipe, it’s your lucky day. These cookies are heavenly! I’ve made them multiple times in the last couple weeks and I have friends asking if I have any on my counter to come sneak away with. 😋 The brown butter really shines here, don’t skip this step.
Hot Eric Honey Spiced Pumpkin Cookies
Ingredients
- 1c. butter
- 1c. packed brown sugar
- 1 egg yolk
- 3 tbsp Hot Eric Honey ~ I used OG.
- 1 tsp vanilla
- 1/3c. pumpkin puree
- 2 1/4c. flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon or a spice combo if you’re fancy.
Directions
- Melt your butter in saucepan over medium heat. Stir until it reaches a nutty amber color. Remove from heat, pour into a bowl and cool to room temp. Don’t forget to scrape the brown bits at the bottom of the saucepan…that’s the flavor!
- Preheat oven to 350 and line a baking sheet with parchment.
- In a medium bowl, whisk together the flour, soda, powder, salt and spices.
- In a large bowl, whisk the brown sugar and cool butter. Add the yolk, Hot Eric Honey, vanilla and pumpkin.
- Add the dry ingredientsto the wet and stir well. Refrigerate dough for 15 mins.
- Scoop and I rolled mine in cinnamon sugar to make them glisten. Highly recommend. Use 2 tbsp sugar with 1 tsp cinnamon.
- Nice big scoops and I baked them for 15 mins on the dot. Rest on the baking sheet then transfer to cooling rack.
