Healthy Honey Nut Bars
This sweet and savory honey nut bar recipe made with organic, natural Hot Eric Honey, plus dates, peanut butter, and other yummy ingredients is easy and healthy!
Ingredients
- 12 pitted dates - room temp
- Peanut butter - 1/3c. warmed to spread
- Original, Chai or Cacao Hot Eric Honey will all be yummy - 3 tbsp. warmed to drizzle.
- Chocolate chips - 1/4c. melted
- Crushed peanuts - 1/4c. rough chopped
- Coconut oil - 1/2tsp
- Flaky salt - sprinkle
Directions:
- Line a sheet pan with parchment.
- Open the pitted dates and lay them down, pushing them down a bit to flatten. Continue with all of them, squishing them down and gently sticking them to the date next-door to create a jagged rectangle of dates. Try for zero space between them.
- Gently spread a layer of nut butter all over the dates, as thick as you’d like. All of the amounts of ingredients can be adjusted to taste and quantity.
- Next drizzle the HEH over the peanut butter. You can swirl them together or just leave drizzly.
- Melt chocolate with a bit of coconut oil, blend together and drizzle or make more and spread it thick.
- Sprinkle the nuts all over the bar. Flaky sea salt is a nice balance to the sweet.
- Pop the whole tray into the freezer to harden then transfer to a lidded dish in the refrigerator.
