Gluten Free Peanut Butter Banana Honey Bars

Ingredients

  • 2 very ripe bananas
  • 1c. Peanut butter
  • 1/4c. Almond meal
  • 1/3c. Hot Eric Honey ~ any blend will work
  • 1 Egg
  • 1 tsp. Cinnamon
  • 1 tsp. Baking Soda
  • Couple pinches of salt
  • 1c. Chocolate chips or 10 chopped dates or a combo.
  • *Extra chips to sprinkle on top if you please.

Directions:

  • Set oven to 325.
  • Line an 8x8 baking pan with parchment.
  • Smoosh those bananas with a fork.
  • Add all the ingredients except chocolate ships/dates.
  • Stir until just blended.
  • Fold in the chocolate or dates or combo.
  • Spread evenly in prepared pan.

I used only chocolate chips the first bake.  It was too much chocolate for me, so on the 2nd bake, I soaked and chopped 10 dates and sprinkled a few choc chips in. That combo was my sweet spot.

This recipe is endlessly alterable…different nut butters, less honey, different add ins. Try it and let me know what you think.
